Shuck it!
We're all ears at the IFM this week: the corn has arrived. Let’s get shucking, everyone.
Whether you like it steamed, boiled, or grilled, mark the start of corn season by gnawing it on the cob. But then, buy extra ears to enjoy the crunchy, juicy kernels in countless other ways. Consider this corn salad! Perfect with some of Titusville Farm's heirloom tomatoes, Maplebrook Farm Creamery feta, and Halal Pastures mint. (Or any other fragrant herb that floats your boat, they have so many to choose from!). You can add cooked or uncooked corn. I like to leave mine raw for maximum crunch! Sounds like the type of thing I’d eat all week right out of the bowl, or the perfect side to a piece of gorgeous Pura Vidagrilled salmon.
How about corn fritters? Mix fresh kernels into a simple batter of flour, R&M eggs, milk, and scallions, then fry until golden! Try them with this all-purpose green dipping sauce made from White Moustache yogurt and fresh herbs. You could even blend in some of the delicious pea shoots currently found under the Madura Farms tent!
Or try this corn chowder, which uses slow-simmered corn cobs to create a rich flavor! Made with market potatoes, green onions, and Letterbox bacon… delicious! And a wonderful opportunity to get to know the lovely Anne Marie, who’s just joined as a market vendor for Letterbox this season. Our conversation last week ran the gamut from ghost stories to the fifteen ducklings that are living in the lake by her house, and the fact that she crochets! (“You made me that orange, green, and white Ireland scarf,” her husband piped up from the back of the tent, to which she replied, “I made that for me!” Ahh, market banter. It keeps things fresh.)
And speaking of fresh, how about those beautiful raspberries under the Caradonna Farms and Mead Orchards tents! Does anyone else still like to stick one on each fingertip and then eat them off? Looking for something more sophisticated to do with your berries? How about this drop-dead gorgeous Raspberry Paris Brest from Zoe Bakes, made with Kariba Farm almonds and Maplebrook butter? Choux pastry and homemade raspberry jam? Sign me up!
