The power of parsley...and fall squash! 

With all the wacky weather we've experienced this summer,  it might seem strange to find autumn descending right on schedule, it seems like the summer heat is ready to take a break until next year. What better way to tuck into these cozy, cooler days than with the abundance of squash at Madura Farm, Stoneberry Farm, and Wright’s Farm? You can pick up more veggies, like beets and carrots, from Great Joy Family Farm to use in this lentil salad with acorn squash or, you can stuff that squash with sausage and kale if you’re looking for something heartier.

You can also caramelize onions and butternut squash from Madura Farm to make a savory tart or get creative with a kale and butternut squash bowl with jammy eggs from R&M Farm, dressed up however you’d like!

If you head on over to the beautiful display at Stoneberry Farm, you’ll see bunches of vibrant parsley. Parsley is the workhorse of the herb garden but don't underestimate its power to enhance and transform the simplest of dishes. Use lots and lots of parsley to make these chicken burgers. Top with cheddar from Cooperstown Cheese, or sauteed mushrooms from Madura Farm.

Fancy more fungi? Make this mushroom barley soup. Whether you have a sous-vide setup or just want to get a nice sear on salmon from Pura Vida, it would taste amazing with some caper-parsley vinaigrette.
